Portobello, Crab and Havarti Wrapped in Puff Pastry with Truffle Cream Sauce

INGREDIENTS

6 5-x-5-inch puff pastry sheets

* all-purpose flour

6 5-inch diameter (approx.) portobello mushrooms

½ pound Dungeness crab

½ pound (approx.) Willamette Valley Cheese Co. Havarti

1 small onion, sliced (4 ounces by weight)

1 cup dry white wine

1 pint heavy cream

1 tablespoon lobster or shrimp base (optional)

1 teaspoon white pepper

2 teaspoons salt

1 tablespoons lemon juice

1 teaspoon lemon zest

* Oregon White Truffle Oil* and/or 1 medium-sized Oregon white truffle

2 tablespoons cornstarch

2 tablespoons water

1 egg

2 tablespoons heavy cream

DIRECTIONS FOR SAUCE

1. Combine onion and wine in saucepan and heat until reduced by half. Add cream, base, pepper, salt, lemon juice and zest. 2. In a separate cup, stir cornstarch with water. Bring sauce to simmer and add cornstarch-water mixture and simmer until thickened. Salt to taste. Keep warm on stovetop or refrigerate. Can be reheated on stovetop. Wraps: 3. Preheat oven to 350°F. Place sheet of parchment paper onto cookie sheet. Dust countertop with flour. Use rolling pin to roll puff pastry until large enough to fully wrap (approx. 8 x 8 inches). 4. Place 1 portobello in center of rolled-out puff pastry. Top Portobello (turned upside down) with 1/6 of crab and Havarti. Pull corners over the top until the entire mushroom and toppings are encased in puff pastry. Carefully flip over onto parchment paper so that overlapping folds are underneath. Repeat with remaining mushrooms. 5. In separate cup, whisk together egg and heavy cream. Brush egg/cream mixture over top of puff pastry so that all of exposed puff pastry is coated. Bake for 12 to 15 minutes or until puff pastry is golden brown. 6. Divide sauce among 6 plates (you will have extra sauce). Drizzle 1 to 3 teaspoons Truffle Oil over sauce and/or shave truffle over sauce. After wraps are baked, slice in half and place onto plates and serve immediately.
