Fireside stays hot naming Jake Martin as executive chef

FOR IMMEDIATE RELEASE ­– The Fireside, Northwest Portland’s bar and restaurant gem gains new momentum with Jake Martin as Executive Chef. Prior to The Fireside, Martin was Executive Chef at Genoa, the long-time Portland fine dining establishment. Martin brings a creative flair and deep understanding of Oregon’s bounty to the menu at The Fireside, while retaining the spirit of outdoor-inspired fare.

In addition to Chef Martin, The Fireside also recently gained new lead bartender, Chauncey Roach. Roach, previously at Ración, a popular downtown Portland restaurant, will bring a lot of creativity to The Fireside’s already stellar beverage program. The Fireside’s cocktails are crafted with well-chosen spirits and a bevy of housemade ingredients, including tonic water, bitters, liqueurs and soda. Many local breweries with a couple special German beers are represented on the rotating taps. Owner and Bar Manager Sue Erickson, curates the wine list with co-owner Wendy Hessel where they select many wines from local regions as well as standouts from classic European regions.

The atmosphere at The Fireside is casual, warm and inviting. There are two large fireplaces, one in the front of the restaurant and the second in the middle, so guests literally gather around the fire. Hanging on the wall in the back of the restaurant is a large painting of a burnt forest that is coming back to life, symbolizing a rebirth, and is a piece diners find themselves gravitating towards.

New menu items include:

  • Seared Albacore Tuna – Cured with salt, sugar, coriander, lemon zest, then seared and served rare and paired with a cucumber panzanella, oil cured olives, and flat leaf parsley
  • Hangar Steak – St. Helens grass-fed beef, with blistered cherry tomatoes, flat leaf parsley and blue d’auvergne
  • Crispy Duck Legs – Confit duck legs served with grilled peaches, spicy mustard greens, and mustard jus
  • Lamb Chop – Hawley Ranch grass-fed lamb served with charred eggplant puree, pepperonata and finished with sea salt
