Winery Canning Class: Asparagus
Growing asparagus requires patience. But once it gets established, you better like asparagus, and know how to preserve it. Blanching is the simplest form of preserving and is for short term storage or freezing. We're going to toss it in olive oil, white wine vinegar, salt, sugar and pepper. It will stay fresh, tender, firm and bright green for many days and for much longer if frozen. We're going to pickle some spicy, some mild and some only slightly.
